Mediterranean Chicken Skewers with Halloumi & Preserved Lemon over Fruited Curry Couscous
Chicken:
Ingredients:
- 1 pound boneless skinless chicken thighs, cut into 1 1/2" pieces
- 3 T pomegranate molasses*
- Zest of 1 lemon
- 1 T olive oil
- 1 package Halloumi cheese, cubed**
- 1 preserved lemon, sliced***
- Salt & pepper
- Skewers
Directions:
Whisk together molasses, lemon zest, and olive oil. Season with salt and pepper and toss with chicken. Let marinade for at least 30 minutes. Skewer chicken and grill 2-3 minutes per side until cooked through. Add preserved lemon and haloumi cheese to skewer and grill another 1-2 minutes until cheese is charred.
*Pomegranate molasses can be found at the Dekalb Farmer's Market and The Cook's Warehouse

Couscous:
Ingredients
- 1 cup couscous
- 1 1/2 cups water
- 2 T olive oil
- 1 T curry powder
- 1 t turmeric
- 1/4 cup dried fruits, chopped
- 1/4 cup nuts, chopped
Directions:
Bring water to a boil. Add couscous and let stand covered for 5 minutes until the water has been absorbed. Whisk together oil and spices. Fluff couscous with fork and toss with spiced oil, dried fruits, and nuts.
