Kevin Rathbun's Garlic Poached Chicken and Zucchini-Parmesan Salad with Lemon Basil
For the chicken:
1 Whole Chicken 3 lb
10 Garlic Cloves
3 Whole Scallions (chopped)
3 Tbsp Salt
Cold water to cover
For the salad:
3 Whole zucchini (peeled)
4 oz Parmesan (whole)shaved
2 Tbsp Lemon Basil (chiffanade)
¼ cup Extra virgin olive oil
2 Tbsp Lemon Juice
2 tsp Kosher Salt
½ tsp Cracked Black Pepper
Procedure:
Place chicken, garlic, scallions and salt in a pot large enough to cover with cold water.
Bring water to a boil and turn off heat cover tightly and let stand for 45 minutes.
Remove chicken and shred, keep at room temperature
In a large bowl peel zucchini and parmesan with a vegetable peeler, toss with chicken add basil, oil, lemon salt and pepper. Toss and serve
