Charlita Varner with Buttersweet Bakery in Hapeville demonstrates her recipe for Valentine's Day cookies.
¾ cup granulated sugar
3 oz. cream cheese, softened
1 cup butter, softened
1 tsp. vanilla extract
3 cup all-purpose flour
1. Cream the sugar, butter and cream cheese until fluffy.
2. Add egg and vanilla until combined.
3. Add flour. Mix until soft dough forms. 4. Separate dough into two balls. Chill until firm enough to roll out. 5. Roll out and cut with cookie cutter. 6. Bake 12 to15 minutes at 350 degrees.
Royal Icing (optional)
3 egg whites, room temperature
1 pound powdered sugar, sifted
1/2 tsp cream of tartar
Combine all ingredients in a bowl, beat at high speed for seven to 10 minutes; stiff peaks will form. This is a quick-drying icing, so keep covered with a damp cloth. Icing can be colored with food coloring. Add a drop at a time to achieve desired color.
Use a small spatula to cover top surface of cookie. Allow to dry uncovered overnight.
