Award-winning cookbook author Cynthia Graubart stopped by 'Atlanta & Company' with a yummy southern peach cobbler.
Lazy Girl Peach Cobbler
1 ⁄ 2 cup unsalted butter
2 cups sliced peaches
1 cup granulated, light, or dark brown sugar, divided
1 cup self-rising four
1 cup whole milk
Melt butter in a 8 x 8” or 9 x 13” baking dish in the oven as it heats to 350 degrees.
Sprinkle fruit with 1/4 cup of the sugar.
Whisk the flour and sugar together in a small bowl. Whisk in milk. Remove the hot pan from the oven and pour the batter on to the hot butter. Sprinkle the fruit over the top of the batter. Bake cobbler for 45 minutes, or until the batter has risen around the fruit, the top is light brown, and the sides are darker brown. Serve warm. The cobbler can be made ahead, refrigerated, and reheated before serving.
