Sumptuous Living's Mandy Landefeld shared a lovely spread, perfect for your Derby parties.

Straight from Mandy:

Always start any derby party with a delicious Mint Julep! Let your guests get creative with a Mint Julep Bar.

Classic Mint Julep recipe:

  • 2 oz good bourbon
  • 1 oz simple syrup
  • fresh mint leaves
  • crushed ice

BAR SETUP:

  • Bourbon
  • Rye Whiskey
  • Champagne
  • Simple Syrup Varieties (Lemongrass Ginger, Blackberry Lime, Orange Clove)
  • Simple Syrup: Bring 2 cups sugar & 2 cups water to a boil. Add fresh ingredients to flavor. Allow to cool (2 hrs to overnight). Strain and store in fridge.
  • Silver pitcher or vase filled with red roses
  • Ice Bucket filled with crushed ice
  • Mint Julep cups

Make race-ready food that is elegant and delicious and easy to prep the day before! Our Cheddar Biscuit Pork Tenderloin Sliders with Blackberry Bacon Jam sound impressive and like you went to culinary school but only take minutes to make! And don't tell anyone, we're using boxed biscuit mix!

Makes 12 Sliders

Biscuits:

  • 3 cups biscuit mix
  • 1 cup buttermilk
  • 2 cups shredded sharp cheddar cheese
  • ½ cup chopped fresh Italian parsley
  • 3 cloves garlic chopped
  • 1 tbs onion powder

Pork Loin:

  • 2-2.5 lbs slender pork tenderloin
  • ¾ cup Dijon mustard
  • 1/3 cup maple syrup
  • 2 tbs chopped rosemary
  • salt & pepper

Blackberry Bourbon Jam:

  • 1 jar good blackberry preserves
  • ½ cup fresh or frozen blackberries
  • 3 TBS Bourbon

Preheat oven to 425 degrees. Bring pork tenderloin to room temperature. Season loins with salt and pepper. Mix together mustard, syrup, & rosemary. Slather onto pork and place in baking pan. Bake for 30-40 minutes or until temp reaches 160. Let rest 10 minutes before slicing.

Meanwhile make biscuits by mixing together all ingredients and dropping by spoonfuls onto a parchment lined baking sheet. Bake for 12-15 minutes at 425 degrees or until golden brown.

Make jam by placing all ingredients in small saucepan. Heat to simmer and cook 5 minutes mashing the blackberries with a wooden spoon. Turn off the heat and allow to cool.

Cut the biscuits in half. Place one slice of pork topped with jam. Place sliders on a fun platter or large wooden cutting board.

Can't have a Kentucky Derby party without derby pie! Derby pie is a chocolate chip, walnut or pecan pie, and you might decide to lace it with a little bourbon (we all know I will!). I love making bars instead of pie because they are more party friendly.

Kentucky Derby Pie Bars

Makes about 24 servings

Ingredients

  • Crust:
  • 3 cups graham-cracker crumbs
  • ½ cup butter, melted
  • ½ cup sugar
  • 1 large egg white, lightly beaten
  • Filling:
  • 1 cup firmly packed light brown sugar
  • ½ cup light corn syrup
  • ½ cup dark corn syrup
  • ¼ cup butter, melted
  • 3 large eggs
  • 1 ½ teaspoons vanilla extract
  • ¼ teaspoon salt
  • 2 cups chopped pecans
  • 1 (12-ounce) bag mini semisweet chocolate morsels

Instructions

  1. Preheat oven to 350°.
  2. Line a 13x9-inch baking pan with heavy-duty aluminum foil. Spray foil with nonstick baking spray with flour.
  3. In a medium bowl combine graham cracker crumbs, melted butter, sugar, and egg white, stirring until well combined. Press crumb mixture into the bottom of prepared pan. Bake for 10 minutes; let cool completely.
  4. In a large bowl, combine brown sugar and corn syrups. Add melted butter, eggs, vanilla, and salt, whisking until well combined. Stir in pecans and chocolate morsels; spoon mixture over prepared crust. Bake for 35 to 40 minutes or until middle is set.

Whipped Cream:

2 cups heavy whipping cream

1 tbs confectioner’s sugar

1 1/2 tbs bourbon
