4 Ways You Can Stay Healthy and Trim All Summer Long:

  1. Eat Seasonal
  2. Eat Local Produce from Open Air Farmers Markets
  3. Consider Hydrating Foods
  4. Keep it Light and Fresh  

Healthy Salad: Watermelon, Cucumber and Avocado Ceviche  

INGREDIENTS:  

For CEVICHE:

  • 3 Cups of Finely Cubed Watermelon (½ inch cubed)
  • 1 Avocado, Pitted and Diced
  • 1 Cup of Diced Cucumber
  • The Juice of ½ Lime
  • 2 Tsp Mint, Minced
  • 1 Pinch of Cayenne Pepper
  • 1 Pinch of Himalayan Salt
  • 1 Drop of Thyme Essential Oil 

METHOD: 

  1. Step One: Cut watermelon, cucumber and avocado into cubes.
  2. Step Two: Add all ingredients into a bowl then toss together

Healthy Snack: Kale Chips 

INGREDIENTS:

  • 1 Bunch of Curly Kale, Cleaned Well
  • Juice of 1 Lemon
  • 1 Red Pepper
  • 2 Garlic Cloves
  • 1 Red Onion
  • 2 Tbs of Nutritional Yeast
  • 1 Drop of Lemon Essential Oil  

METHOD: 

  1. Step One: Wash kale leaves very well removing any sand
  2. Step Two: Put ingredients below kale in food processor
  3. Step Three: Blend really well making a paste
  4. Step Four: Scoop mixture out and massage into kale leaves
  5. Step Five: Put leaves in a dehydrator
  6. Step Six: Dehydrate until crispy then serve

Healthy Sweet: Choco-Mint Chia Seed Mousse 

INGREDIENTS:

  • 3 Tbs of Chia Seeds
  • 2 Ripened Avocadoes
  • 1 Cup of Dark Chocolate Morsels
  • 2 Cups of Almond Milk
  • 2 Drops of Peppermint Essential Oil 

METHOD:

  1. Step One: Combine all ingredients in a blender until smooth.
  2. Step Two: Spoon mixture into mason jar to set
  3. Step Three: Set in refrigerator for 3 hours then serve Step Four: You can eat as a snack or as a dessert
